Our veg of the month for February is winter purslane
Also known as miner's lettuce and claytonia, this hardy salad crop packs a nutritional punch, with its high content of Vitamin C, Vitamin A, iron & beta carotene. It's also a great heart tonic!
The word purslane comes from the Latin root "pullipedem", which translates as “chicken foot”, due to the slight resemblance. Feels very fitting for Growhampton, especially as the hens love snacking on it!
Head to The Hive Cafe to pick up a fresh, organic bag today! Campus-grown and harvested by students.
Winter purslane makes a fantastic addition to the delicious & affordable Middle Eastern dish of Fattoush. Give it a go!
