Tricolour pancakes (As made at Community Lunch)

Basic recipe:

  • 4 eggs (organic, free-range)
  • 550 ml plant milk ( we used hemp)
  • 2 cups (500ml) white flour 
  • 1 large tablespoon of butter or coconut oil
  • Salt

Instructions:

Mix all the dry ingredients (flour, salt) in a bowl. Melt butter in a pot, before you add milk and give this a stir.

Then add the milk/butter to your bowl and mix well until the batter is lump free. Add more milk or flour if needed. Let the mixture set for at least 1 hours in the fridge, but 2 hours is ideal!

Then you are ready to fry! 

Spinach / Beetroot pancakes

  • 4 eggs (organic, free-range)
  • 550 ml plant milk ( we used hemp)
  • 2 cups (500ml) white flour 
  • 1 large tablespoon of butter or coconut oil
  • Big handful of fresh spinach or 2 cooked beetroots
  • Salt

Instructions:

Mix all the dry ingredients (flour, salt) in a bowl. Melt butter into a pot, before you add milk and give this a stir.

In a blender, add the handful of spinach or beetroots and cover with the milk and butter mix. Blend until smooth, before adding to your bowl of dry ingredients. Mix well until the batter is lump free. Add more milk or flour if needed. Let the mixture set for at least 1 hour in the fridge, but 2 hours is ideal!

Then you are ready to fry!
